Some of our work

This is a small library of pictures I have taken of my work - from conceptual technique driven dishes like 'BLT' where we recreated all the flavours of the BLT (bacon, lettuce, tomato and bread)  but in a different form and served in a Martini and shot glass, to a ingredient focused butter and onion sauce, Arbroath smokie bon bon and fermented turnip disk - which is hyper seasonal and uses the very best of the British Isles produce.

'BLT'

This is my reinterpretation .of the famous 'BLT' sandwich... It is heritage tomato consomme set as a jelly using Vegi Gel, topped with a bacon cream foam, pancetta shards, sourdough croutons and a lettuce 'shot'    

Arbroath smokie bon bon, butter onion sauce, fermented turnip disk  

This dish became my 'Signature' dish on my tasting menu private dining events and was often voted as the favourite course.

'Breakfast'

Appearances can be deceptive... this is only a egg yolk that has been sous vide, set in white onion sauce, with toasted granola and chopped chives.   

BBQ scallop, fermented turnip sauce, ham hock and baby leek crumb

Another course from a tasting menu - which combined the sweetness of the scallop, with acidity and salinity of a fermented turnip sauce with the ham hock burnt ends giving texture and taste.
